A Food Safety Program (FSP) is a written document that describes how a food business identifies, prevents, and controls food safety hazards. Under the Food Standards Code Standard 3.2.1, certain food businesses in NSW are legally required to have one in place and to make it available to authorised officers on request.
An effective Food Safety Program must be tailored to your specific business — a generic template will not satisfy a NSW Food Authority or local council auditor. It should describe your menu, your processes, and the specific hazards that apply to your operation.
Under Standard 3.2.1, businesses that handle potentially hazardous food and serve vulnerable populations — such as aged care facilities, hospitals, and child care centres — must have a documented Food Safety Program. High-risk caterers and some manufacturers also require one.
