What's the difference between a HACCP plan and a Food Safety Program?
A HACCP plan is the hazard analysis and critical control point documentation specific to your products and processes. A Food Safety Program is the broader management system that includes the HACCP plan plus supporting procedures — staff training, cleaning schedules, supplier approval, pest control, and corrective action protocols. Every food business in NSW needs a Food Safety Program. Whether you need a full HACCP plan depends on your business classification and the nature of your food handling.
Do council and NSW Food Authority inspections cover the same things?
Most councils in NSW administer food safety inspections for Class 3 and 4 food businesses (cafes, restaurants, retail) under agreement with the NSW Food Authority. The inspection criteria are based on the same Food Standards Code requirements, but the depth and focus can vary by council area. The NSW Food Authority directly regulates Class 1 and 2 businesses (manufacturers, hospitals, aged care). AMES Food Advisory prepares you for both — because the standard your inspector uses is the same either way.
Can I use free online food safety plan templates?
Free templates describe a generic operation — not yours. Auditors and council officers can identify templated documentation immediately. More importantly, a generic template won't capture the specific hazards, controls and processes unique to your kitchen or production line. A template that doesn't match your actual operation is worse than no documentation — it's evidence you haven't properly assessed your food safety risks.
